This recipe is the perfect topper for all sorts of Mexican dishes! It’s also good just served with a bowl of tortilla chips!
Corn Salsa
Ingredients
- 24 ounces frozen sweet corn
- 2 jalapenos, chopped (leave seeds in if you like more heat!)
- 1/2 red onion, finely chopped
- 3/4 cup chopped cilantro
- 2 limes, juiced
- 1 teaspoon salt
- 1 teaspoon pepper
Instructions
1. Thaw frozen corn in a colander in the sink by running hot water over it, drain and add to a large bowl,
2. Add other ingredients and combine well.
3. Taste the salsa and add more salt, pepper, or lime juice until it tastes perfect.
