This is the recipe that I use for my famous Chipotle Bars, and it is always a HUGE hit! You will want to marinate the Chipotle Chicken for at least twelve hours prior to grilling.

Chipotle Marinated Grilled Chicken Thighs
Delicious marinated grilled chicken perfect for a Chipotle Bar or Taco feast!
Ingredients
- 1 (7 ounce) can of chipotle peppers in adobo sauce
- 1 red onion, cut into quarters
- 1/4 cup ancho chile powder
- 6 cloves of garlic
- 2 teaspoons cumin
- 2 teaspoons oregano
- dash of salt and pepper
- 1/2 cup of olive or avocado oil
- 1 cup of water
- 5 lbs boneless skinless chicken thighs
Instructions
- Put all of the marinade ingredients into your food processor and process until smooth.
- Pour over chicken and refrigerate for at least 12 hours.
- Grill chicken on a hot grill until done, reserve the marinade.
- While chicken is cooling enough to chop, pour reserved marinade into a pot and add 2 cups of chicken broth, stir and bring to a boil. Boil for at least 10 minutes, set aside to cool slightly.
- Chop chicken into bite-sized cubes, put it into a serving pan, then pour the boiled marinade back over the chicken.
- Enjoy!
